Hunger pangs driving you nuts and the fridge isn’t offering you any delectable options? Here are some comfort food recipes that can be made within 10 mins and with 3 different basic ingredients. Gorge away!

EGG PAKORA YOU NEED

Boiled egg (2 or 3 depending on the number of people), 5 tbsp Gram flour (channa atta or besan), 1 1/2 tsp red chilli powder, 1 tsp salt, 1/4 tsp turmeric powder, water, oil (for frying), frying pan.

METHOD

• For the batter, take the gram flour and put in the red chilli powder, salt and turmeric powder and mix well.

• After that, put enough water to the gram flour for it to dissolve and become a smooth paste like mixture. Stir well.

• Warm the oil in the frying pan on medium flame.

Cut the hard boiled eggs into four pieces.

Dip them in the batter generously and fry them in the oil.

Remove on a plate lined with kitchen roll.

Eat piping hot with coriander or mint chutney.

CHEESE OMELETTE

YOUNEED

2 eggs, 1/2 tomato (finely chopped), 1/2 onion (finely chopped), 1 green chilli (finely chopped), cheese (slices or grated), salt, pepper

METHOD

• Beat 2 eggs in a bowl until smooth.

• Add the finely chopped tomato, onion and green chilli (optional), and salt and pepper (to taste), and mix well.

• Place a saucepan on the gas, with medium flame. When hot, line the pan with 1tsp oil or butter.

• Spread the egg mixture onto the pan and cook on one side.

• Flip to the other side, add cheese (grated or sliced) onto the cooked side and flip once again.

• Keep flipping till well done (golden brown)

• Garnish with Mustard and ketchup. Warm toast would be a perfect accompaniment and a nice mug of coffee or tea for all caffeine addicts.

EGG BURJI

YOU NEED

4 eggs, 1 onion (finely chopped), 1 tomato (finely chopped), black cumin seeds, curry leaves, 1 chilli (finely chopped), 1/2 tsp red chilli powder, garlic paste, turmeric powder, salt and pepper to taste, 1 tbsp oil

METHOD

• Beat 4 eggs in a bowl and keep aside.

• Grab a saucepan and place it on medium flame till warm.

• Add oil and after that warms up, add cumin seeds, curry leaves, onion and green chilly as per your liking and stir until brown.

• Add tomato and garlic paste and keep stirring continuously. Cook until brown.

• Add red chilli powder and turmeric powder to the mixture as per your taste.

• Now add the four eggs to the mixture and stir well till cooked.

• Garnish with coriander and/or green chillies as per your taste.

• Taste best with warm buns, sauteed in a little bit of butter.

POTATO -Apart from the ready to eat, frozen potato goodies, here is something more you can do with the humble vegetable!

SIMPLY SPICY -ALOO «SUBZI» MADE WITH RED CHILLIES

YOU NEED

3 potatoes, 2 tbsp oil, 1/2 tsp black cumin(rai), 2 tsp red chilli powder, 1/4 tsp Turmeric powder, 2 tsp roasted coriander cumin powder (dhania-jeera powder or garam masala), 1 tsp salt, 1 tsp sugar.

METHOD

• Boil 3 Potatoes in a pressure cooker for upto 5 minutes, (if using the microwave oven then for 10 minutes)

• Peel and cut the potatoes into small pieces and set aside.

• Put oil in a saucepan or a wok (kadhai), and place it on the gas on medium flame.

• Put in the black cumin seeds and wait for them to start popping.

• Lower the flame and put in the boiled potato pieces into the pan and Stir for a minute.

• While the flame is low, add red chilly powder, turmeric powder, roasted coriander cumin powder, salt and sugar (to taste)

• Continue stirring, till the vegetable develops a lovely reddish yellow colour and make sure all the spices have been mixed perfectly.

• Eat hot by itself or with Chapatti, naan or bread. Also can be eaten with khakra.

GREEN COMFORT — ALOO SUBZI MADE WITH GREEN CHILLIES

YOU NEED

3 potatoes, 2 tbsp oil, 1/2 tsp black cumin(rai), 2 green chillies (finely chopped), 1/4 tsp Turmeric powder, 2 tsp Roasted Coriander Cumin Powder (dhania-jeera powder or garam masala), 1 tsp Salt, 1 tsp Sugar.

METHOD

• Put 2 tbsp of oil in a saucepan or a wok (kadhai), and place it on the gas on medium flame.

• While the flame is low, add chopped green chillies, turmeric powder, roasted coriander cumin powder, salt and sugar (to taste)

• Continue stirring, till the vegetable develops a lovely yellow colour and make sure all the spices have been mixed perfectly.

• To be consumed extremely hot with chapatti, or can be placed in between 2 slices of slightly toasted bread.

BREAD — Tired of the same old grilled cheese sandwich and toast? Well here are some fun recipes that can be made with bread, fresh or stale!

BREAD ROLL

YOU NEED

Bread slices (preferably stale), processed cheese slices, butter or oil (to fry).

METHOD

• Put the bread slices on a flat surface and roll over them with the roll pin applying light pressure, till they are flat.

• Place the cheese slices on the flattened bread, if the slices are refrigerated leave them out or near the gas till they are soft, not melted.

• Roll the bread to form a nice cylinder. If the end does not stick dip your fingers in water and slightly run them at the end of the bread.

• Take a bit of butter in a saucepan or oil in the frying pan, and fry the bread rolls until they turn brown.

• Take them out and enjoy the melted cheesy goodness

• Can be eaten with mustard, ketchup or salsa dip.

BREAD РОНА (CHEWDA)

YOU NEED

Bread slices (preferably stale), 2 tbsp oil, 1 tsp red chilli powder, 1/2 tsp sugar, 1 tsp salt, a pinch of turmeric powder, black cumin seeds

METHOD

• Break the bread into tiny pieces in a bowl.

• Add the red chilly powder, sugar, salt and turmeric, and mix them well, by hand.

• Put the oil in the saucepan or kadai, on medium flame and wait until warm.

• Add the cumin seeds and wait until they pop.

• Add the bread and stir till they turn crisp.

• Empty the saucepan in a plate or bowl lined with kitchen roll so as to blot out the excess oil.

• Eat as is or add a little bit of lime juice for that extra zest.

BREAD PAKODA ff

YOU NEED

Bread slices, Coriander or Mint chutney, 5 tbsp Gram flour (channa atta or besan), 1 1/2 tsp red chilli powder, 1 tsp salt, 1/4 tsp turmeric powder, water, oil (for frying)

METHOD

• Make a sandwich using the bread slices, apply the mint or coriander chutney on one of the slices and place the other slice on top of it.

• Cut these into 4 triangular pieces and set aside.

• For the batter, take the gram flour and put in the red chilly powder, salt and turmeric powder and mix well.

• After that, put enough water for it to dissolve and become a smooth paste like mixture. Stir well.

• Warm the oil in the frying pan on medium flame.

• Take the triangular pieces of bread and dip them generously in the batter covering all sides, especially the corners and immerse them in the oil.

• Keep turning them over till they are a light golden brown.

• Take them out and place them on a plate lined with kitchen roll to blot out the excess oil.

• Eat with coriander or mint chutney or ketchup.

• Extra tip: with the coriander and mint chutney you can also put in the above mentioned aloo subzi in red chilly as a stuffing.
